I've tried uploading the Slideshow exhibit format via the main link here on the forum (have uploaded the jquery file to the js folder, css to css and plugin to plugin) yet it is not showing up in the Formats on the admin side for me to enable it, and as such no where else on the site. What is going wrong?

Did you try enabling it (from Admin>format>slideshow, enable) ?
It doesn't appear in the list. All that shows is Documenta, Horizontal, No Show, No Thumbs, Over and Over, Random Image, Tag Display and Visual Index.
It's available in the customization forum here for download. Do a quick search.
