How could I remove the nag index on the left while inside an exhibit. Back buttons or links would then be used inside an exhibit to go back to the menu. I am thinking this might make my site more iOS friendly.

We're working on a truly mobile Indexhibit - it will be a bit though (I'm not going to give an exact date).
You could simply create a new template that doesn't have the #index for your exhibits...
