What is the best way to update previous versions of indexhibit without losing any data?

- save any custom styles, templates or plugins you've created
- replace all files with the new ones
- run the /studio/upgrade.php file (just bring it up in your browser - you'll get a note)
- reapply your changes (if necessary)
